Chipotle Sweet Potato Hash

  • 1 large sweet potato, thinly sliced into half-moons
  • 1 medium onion, sliced
  • 1 chipotle in adobo, minced
  1. In a heavy-bottomed pan heat a neutral oil over medium-high heat.
  2. Add the onions and cook for just a minute until they begin to soften. Add the potatoes and continue cooking for another 5 minutes, letting the onions and potatoes develop some charred edges and crisp up.
  3. Add the chipotle and ¼ cup of water. The water will help steam the final rawness out of the potatoes. Scrape the bottom of the pan to pick up the frond. Mix well and serve immediately.
